Beijing's food
Beijing's food is built from the layers of a long capital. Roasting methods and cooling sweets tied to the Ming and Qing courts survive in shops at Qianmen and in the hutong, while at the same distance stand commoner tastes, fermented douzhi, offal snacks and street tanghulu. Since modern times, Sichuan, Chongqing and Xinjiang cooking have flowed in, and mala and skewers took root in the night streets. So the city's food resists a single word. Starting from three areas
For a first step, three streets of different character are chosen. Qianmen and Dashilan is a commercial quarter where Peking duck houses stand near old snacks, douzhi, baodu, chaogan and lüdagunr, formal and common meeting. Nanluoguxiang, the hutong south of the Drum Tower, is an easy street where court-descended milk curd and pea cake, with tanghulu, zhajiang noodles and lamb skewers, are eaten from the hand while walking. Guijie is a night food street that fills after dark, with mala crayfish, hotpot, grilled fish and lamb spine steaming. From daytime formality to nighttime heat, walking the three in turn lets you feel the range of Beijing's food.
How to read Beijing's food
To read Beijing's food, watch how time of day maps to place. Douzhi and chaogan are morning foods, and many shops close before noon. Peking duck and baodu run midday to night, while mala crayfish, hotpot and lamb spine come into their own after dark. Even within heat, Guijie's mala is a newer layer from Sichuan, Chongqing and Xinjiang, unlike the old-Beijing douzhi and lüdagunr in origin. The range of prices is a clue too, stall snacks from a few yuan, duck and hotpot a step higher. What you eat matters less than when, and which street, you walk. That is the pleasure of a capital's food.
Before you go
Payment is widely by mobile apps, and some shops take cash or foreign cards poorly. Stall snacks can be ordered in small amounts, but well-known houses and hotpot often mean waits, crowded on weekends and at peak season. Heat can usually be chosen by level, so start from one you can manage. Some streets, like Guijie, peak at night, while some foods, like douzhi, are served only in the morning, so match your hours to avoid wasted trips.
