Why you must eat itSteamed yellow-millet dough is rolled around red bean paste and dusted heavily in toasted soybean flour. The flying flour, likened to a donkey rolling in dust, gives the name. It is soft and chewy, the toasted flour meeting the mild sweetness of the paste. It stays tender when cool, right for a slice eaten on the move, and good with tea.
An old confection carried through Manchuria and Beijing, sold at temple fairs and sweet shops. It is usually made in advance, and prices are a guide by the piece. Its flavour fades over a day, so eat it fresh. Shops sometimes move, so look for the sign or the queue.
