Why you must eat itPork intestine and liver simmered in a soy-brown broth thickened with starch. Despite the name, it is a stew, and locals drink it by turning the bowl at its rim rather than using a spoon. A great deal of minced garlic is its core, with the chew of intestine and the softness of liver sunk into the broth. A single steamed bun beside it makes a breakfast.

A commoner breakfast said to have begun near Qianmen in the late Qing. Some shops still sell out before noon. Prices vary by bowl size and are a guide. The garlic is strong, so mind what follows. Opening times run early and differ by shop, so go in the morning to be sure.
