Why you must eat itA duck roasted over fruitwood is sliced thin at the table. The skin dries to amber and turns sweet as the fat releases. Skin and meat go onto a thin wheat pancake with sweet bean sauce, scallion and cucumber, eaten by hand. One duck is shared among several people, and the carcass can be simmered into soup at the end. Open from midday, with waits at dusk.

The method traces to the Ming and Qing courts and survives in the old houses around Qianmen. Two traditions, open-oven and closed-oven, differ by wood and heat. The price is a rough figure per duck and shifts with cuts and pancakes. Hours move with the season, so confirm on site.
