Why you must eat itA grey-green liquor of fermented mung bean, served warm in a bowl. Its sour smell gives pause at first, then settles as you sip. A ring of fried dough, jiaoquan, is dipped in, with a little pickled vegetable on the side. Older locals drink it quietly from early morning. Sitting on a stool by the door, rather than taking it away, is the local way.

A fermented drink that stands for the old Beijing morning, loved and disliked in equal measure. A commoner staple since the Qing, it is fixed by its jiaoquan and pickles. Prices are approximate and vary with bowls and rings. Many stalls open only for breakfast, so check the hours locally.
