Why you must eat itThin dough is folded around a pork-and-scallion filling into a long pouch and fried on both sides on a griddle. The name comes from its likeness to a shoulder satchel, the dalian. The outside is fragrant and the filling runs with juice. A little vinegar and chili oil, with a bowl of hot-and-sour soup, is the usual pairing. A few make a light meal.
A fried snack born in late-Qing Beijing, tied to Qianmen and Menkuang Hutong. Fillings can be chosen. Prices are a guide by the number on the plate. Frying to order can take time, so expect a wait when busy. Hours differ by shop, so confirm on site.
