Why you must eat itA block of steamed, set starch is sliced thin and fried until the edges curl. Despite the name, no meat is used now, and starch is the main ingredient. Crisp outside and chewy within, it is eaten with a drizzle of salted garlic water. Spearing it on a bamboo pick and eating standing is the local manner.
