How Xiamen's food came to be
Xiamen's food belongs to Minnan cuisine — the cooking of southern Fujian, centred on Quanzhou, Zhangzhou and Xiamen — and two things run through its taste. One is the sea. As a port on the Taiwan Strait, oysters, peanut worms, clams like razor and blood clams, and shellfish are everyday ingredients, brought to the table as oyster omelette, tusundong and seafood congee. The other is shacha — a paste of peanut, dried shrimp and spices; originally Southeast Asian satay, carried back by overseas Chinese who had gone south, and rooted here as shacha noodles and skewers. Over that lie the pastries and coffee culture the Gulangyu concessions and returnees brought. The freshness of the sea, the richness of shacha, and the sweetness out of the Nanyang and the West — these layers make the Xiamen plate, deep in savour though never hot.
Three faces
Here, Xiamen is split into three routes with distinct characters. First Zhongshan Road — an old-town street running since the 1920s, an arcaded pedestrian way. Minnan snacks — Huang Zehe's peanut soup, Yuehua's shacha noodles, Lianhuan's oyster omelette, Hao Qing Xiang's zongzi — gather most thickly a block off the main road into the lanes. Then Shapowei — an old harbour on the island's south shore, a retro quarter where seafood stalls and converted cafes share the ground around the boat basin. You walk Zuiyihao's wok-fried seafood and charcoal oysters, breaking them with coffee and seaweed jelly. And Bashi — the Eighth Market in the heart of the old town, the city's foremost "street kitchen," where a local day's eating — Wutang's shacha noodles, market-fried oyster omelette, Datong's duck congee — packs tight into the morning market. A few words that unlock Minnan food
Walk Xiamen and a few words keep coming up. "Shacha" is a peanut-based paste, and noodles dressed with it are shacha noodles — led not by heat but by depth and sweetness. "Haili" means oysters: fried with egg and starch it is oyster omelette, cooked in congee it is oyster congee. "Tusun" is a marine peanut worm, and its boiled-down broth set firm is tusundong — the "sun" in the name means bamboo shoot, but it is no plant. "Miexian" is very fine wheat vermicelli, and thickened it becomes mee sua paste. And just as the oyster omelette holds no crab and the wuxiang roll no crab shell, Minnan dish names often come from a shape or a scent. Learn just these four — shacha, oyster, tusun, mee sua — and the stall signs read differently.
How to eat in Xiamen
Xiamen's snacks are liveliest in the morning. Shacha noodles and mee sua paste are breakfast staples, the famous shops queuing before noon and some closing after; a market like Bashi peaks in the morning too. So aim for the morning. Payment is mostly electronic (a phone QR code), but small market stalls may still take cash only, so a little cash reassures. Seafood stalls and charcoal grills are often "market price," so confirm quantity and cost before ordering and the bill holds no surprises. And portions are made small: don't fill up at one shop but share between two or more and graze across many — a rich bowl of shacha, a plate from the sea, a Nanyang sweet, in turn. Come with an empty stomach, and that is the right way to eat this port town.
