Why you must eat itThe broth, loosened with shacha paste, comes red-brown, built on peanut sweetness and dried shrimp. Fragrance and depth lead ahead of heat. Yellow oil noodles are topped with what you pick — pork offal, duck blood, fish balls, prawns, pork liver — and the bill is the number of plates you chose. The broth is rich enough that many finish it to the bottom. Xiamen shacha is Southeast Asian satay carried across the sea and made local — the backbone of the city's eating.
