Why you must eat itOpen the bamboo leaf and steam rises off soy-stained glutinous rice. Inside sit braised pork belly, dried shiitake, chestnut, salted egg yolk and dried shrimp, the fat and stock soaked grain by grain. Xiamen eats it not plain but under sweet-chilli and shacha sauce with coriander scattered over. One fills you up, so splitting it between two and saving room for other snacks is the smart move.

An old house you cannot leave out of any account of Xiamen zongzi; besides the rice bundles it carries tusundong, shacha noodles, mee sua paste and wonton. Zongzi is often thought of as a Dragon Boat Festival food, but here it is steamed year-round and eaten morning to night. Close to the Zhongshan Road area, it suits a mid-route sit-down meal.
