Why you must eat itSmall oysters bound in a batter of sweet-potato starch, an egg cracked in, fried on a griddle. Crisp at the edge, still soft and half-set in the middle. Finished with scallion and crown daisy (or garlic chives) and a line of sweet-chilli. The salt of the oysters, the sweetness of the batter and the tang of the sauce meet on one plate. Close to Taiwan's oyster omelette, but the Xiamen version keeps a thinner starch film and lets the oysters lead. Best eaten standing, straight off the pan.

Known as a Jukou Street name for oyster omelette, with a lunchtime line waiting on the next pan. The dish is a signature griddle plate that crossed from Minnan to Taiwan, where the oysters' freshness and the starch balance separate the shops. This one is known for a generous hand with oysters — an easy stop when the route turns onto Jukou Street.
