Why you must eat itA leavened batter cooked fluffy in a big flat pan, scattered with sugar and crushed peanut (or black sesame), then folded in half — a Minnan griddle sweet. Golden on the surface, full of bubbles inside and sponge-light. The toastiness of peanut and the grit of sugar melt into the warm batter. Have a piece cut fresh and eat it on the spot. Its plain sweetness suits closing the market walk, or a sweet note after mee sua paste.

Man jian gao is a griddle sweet found widely across Minnan, Chaoshan and Southeast Asia's Chinese communities, called "mian jian kueh" or "big-pan cake" in various places. In Xiamen it has long been cooked in a flat pan and sold at morning markets and lane shops. Peanut and sugar were once standard; now black sesame, coconut and bean paste widen the fillings. Soft when fresh and firmer once cool, it is best eaten soon after buying.
