The congee is close to the Cantonese "live-boiled" style, the grains still holding shape, steeped in duck fat and savour. Dust with pepper, coriander and fried shallot, and add from the soy dip and sweet-chilli on the table. Duck offal and blood go well too. Open all day, it serves as breakfast or late supper, and those who work late or stay up come for a bowl. A working-class congee shop on Xiahe Road at the edge of Bashi.

At 174 Xiahe Road, opposite Datong Primary School just outside Bashi, a congee shop of over a decade. Neighbours are its regulars, some never missing a daily bowl. Open all day, it draws those coming off night shifts and late-nighters, and on busy days is said to sell over four hundred bowls. Duck congee is everyday Minnan food, plain in flavour, the rice steeped in duck stock. Taste it not as a sight but as a bowl woven into local life.
