Why you must eat itVery fine wheat vermicelli (mee sua) cooked in a starch-thickened stock until it turns to a paste. The noodles all but lose their form and merge with the broth, sipped together. Choose toppings — oyster, large intestine, duck blood, prawn, braised egg — and dust with pepper, coriander and fried shallot. Gently salted, it is just right to wake the stomach first thing. "The north has hulatang, the south has mee sua paste" — a Xiamen breakfast standard.

Mee sua paste is said to originate in Quanzhou and is a pillar of Xiamen breakfast too. Thickening the fine noodles with starch gives it the easy-to-digest mouthfeel of congee. Around Yingping Road and Bashi, mee-sua shops open before dawn and fill with locals on the way to work. Toppings combine freely, and many dip a length of youtiao into it. Between market rounds, it also makes a mild break when the salty dishes pile up.
