Why you must eat itA clear, springy jelly set from boiled-down seaweed. Shredded fine into a bowl, drizzled with honey or brown-sugar syrup, and topped with your pick of mung beans, grass jelly, glutinous rice balls, red beans or fruit — a cold Minnan sweet. Being seaweed-based, it finishes clean, just right for a hot Xiamen afternoon. A well-iced bowl settles a body warmed by ginger duck and seafood. Easy to eat on the move or at the counter.

Shihuagao is a traditional Minnan and Chaoshan sweet, made by long-boiling a seaweed (a relative of agar-weed) until it sets like agar jelly. A summer standby on Xiamen and Quanzhou street corners, its pleasure is choosing and combining toppings; many shops serve it close to "siguo tang" with grass jelly added. Unlike a manufactured jelly, it is made from the seaweed itself, and a faint briny scent is the mark of the real thing.
