Blood clams, razor clams, venus clams, mantis shrimp and mud crab are the Xiamen regulars, tossed fast with shacha, fermented black bean and garlic. As a port town, freshness leads and the seasoning stays short of heavy. After dark the tables spread around the boat basin and the beer comes out. The more of you there are, the more plates you can order.
