Why you must eat itThe no-soup school of shengjian. Instead of a burst of broth, the thicker dough drinks the juice up. Crisp underneath, soft and steamed on top. Four to a portion, and traditionally eaten plain — no vinegar, no soy.
Founded 1932. Shengjian splits into a soup-filled school and a dry school, and Da Hu Chun is treated as the home of the latter. The main shop is on Yunnan Road South, but the Sichuan Road branch sits just short of the Bund — right where you finish walking Nanjing Road East. Open from 7am.
