Hu Gong Guan (Bund 22)
×Squirrel-style Sea Bass
Why you must eat itFried only after you order. The bass is scored into a pinecone, stood upright on the plate, and the sweet-sour sauce lands on it with an audible hiss. Hard-crisp outside, yet the flesh inside lifts away in flakes. Far too large for one person — bring company.
A benbang restaurant on the second floor of Bund 22, inside a heritage building on the southern stretch of the waterfront facing the Huangpu. Alongside the squirrel bass, the signatures are grandmother's braised pork, crab-roe over rice, and sizzling eel. Two sittings, 11:30–14:00 and 17:30–21:00; the kitchen closes at nine.
