Why you must eat itFour prawns fried dark in sesame oil. The batter is made to drink up a secret sweet-salty sauce, so despite being deep-fried it parts under chopsticks. Come expecting crispness and you will be disappointed — this is a tendon you eat for the sauce.

Opened as a soba shop on Denboin Street in 1887 and turned to tempura around 1910; the frying has not changed since. Open every day until 8:30pm, making it one of the few old houses here you can use for dinner. There is an annexe as well as the main shop.
