Why you must eat itThin skin wrapped around pork and hot soup, steamed in bamboo baskets. The pleats are held to eighteen folds, the crown pinched tight. To eat: set one on a spoon, nick the skin to let the soup out, dip in black vinegar with slivered ginger, then to the mouth. The spring of the skin, the flood of juice, the sourness of ginger and vinegar arrive together. It's hot, so open the first one to vent the steam. Through the glass you watch the folders work, and fresh baskets keep coming. There are seafood, crab and seasonal versions, but start with the basic pork.
Din Tai Fung is the Taipei-born xiaolongbao house now spread worldwide. The Xinyi Road flagship sits right by Yongkang Street and stays busy all day with travelers and locals alike. You take a ticket and wait, checking the time by app or the number at the door. Prices run above a night-market stall, but are fair for a plate eaten sitting down in comfort. The quality and hygiene are high, making it an easy first taste of Taiwanese food. To dodge the crowds, aim for opening or a late hour. Hours can change, so confirm on the spot.
