Why you must eat itDough worked through with scallion, griddled and beaten with a spatula to loosen its layers as it cooks. Ask and they fold in egg, basil, cheese or ham. Fresh off the plate it's crisp outside, soft and chewy through its many layers, the scallion fragrant. A sweet-hot or chili sauce is brushed on to finish, then it's folded and handed over in a paper bag. Held in one hand and eaten on the move, it's a famous Yongkang Street stall — it queues but turns over fast. The egg version is the standard. Right for eating light, or to bridge a wait at another shop.
The scallion pancake is a standard street griddle food in Taiwan, and Tianjin Scallion Pancake is Yongkang Street's well-known stall. The "Tianjin" in the name is a place name, and also a nickname for the stall's spot. Making the dough by hand and cooking to order is its character. It's cheap, and affordable even with add-ons, so it fits easily into a walk of eating. Fresh off the griddle is everything, so it's worth waiting for a hot one. The line looks long but moves fast. As a stall it's usually cash only. Hours and closing days can change, so confirm on the spot.
