It's a dish you could call Taiwan's national bowl. Take the broth first, then meat and noodles, then shift the taste with the pickled greens on the table. The meat parts under chopsticks, and the fat and red broth stay on your lips. You slurp it with a sweat coming up. Some shops offer a non-spicy clear broth (qingdun). A sit-down place — it queues but keeps turning. Order half-tendon-half-brisket to taste both.

Beef noodle is one of Taiwan's signature noodle dishes, with so many specialists that Taipei holds a "beef noodle festival" each year. The Yongkang area is known as a cluster of famous shops — you can compare bowls within this quarter alone. Hongshao (spicy) and qingdun (clear) are the two main lines; choose by taste. Unlike walking street food, this is a bowl to settle into, so it also serves as a mid-route place to sit and rest. The price rises with the amount of meat. Popular shops crowd at the lunch and dinner peaks, so off-peak is easier. Confirm hours and closing days on the spot.
