Why you must eat itA charcoal-grilled glutinous-rice sausage is split open and a sweet Taiwanese pork sausage tucked inside—the name pictures the large intestine (rice) wrapping the small (meat). The grilled outside is chewy and springy, and a bite releases the fat and sweetness of the pork. Minced garlic, pickled greens and a sweet-hot sauce go on to taste, and it eats in one hand, made for walking the market. The smoke and smell off the grill tend to stop you where you stand.
