Why you must eat itBatter poured into wheel-shaped molds, packed with filling and baked on both sides—the wheel cake is the right sweet to close a night at the market. The classic red-bean paste is cooked to keep its grain, its restrained sweetness meeting the toasted skin. Fresh off the iron the outside is crisp and the inside moist and warm, the filling spilling a little with each bite. Many stalls offer custard, taro and other fillings to choose from, and buying two or three to share as you walk is part of the fun. That it costs only loose change is its own small pleasure on a Raohe night.

The wheel cake is a Taiwanese griddle sweet akin to imagawayaki, usually offered with a choice of red bean, custard and other fillings. Stalls bake each to order. At Raohe it is enjoyed as a sweet to end the walk. Prices are a rough guide, a few dozen NT dollars each.
