A thin skin wraps pork and chopped scallion in a black-pepper filling, baked through in one blast of heat. Sesame crusts the top, and juice seeps out when you break it open. Fresh from the oven it runs hot, so bite the edge first and let the steam go. Picked up beside Ciyou Temple, one bun makes the right weight to start walking the market.

The Fuzhou-style bun is baked the old way, dough pressed to the inner wall of a cylindrical charcoal oven, and at Raohe this method is what the market is known for. Baking runs from dusk into the night and stalls often sell out. Prices are a rough guide; one bun fills a small hunger well.
