Why you must eat itOne of Raohe’s older stalls, Dongfa Hao serves youfan—glutinous rice stir-fried with dried shiitake, dried shrimp and shredded pork, glossed with soy and sesame oil. The grains sit firm and moist, and the savor of the filling rises the longer you chew. It is usually ordered alongside the stall’s equally known squid thick soup, the starchy broth and the rice setting each other off. Served in a small bowl, it slots in lightly on a night of grazing.

Youfan is a glutinous-rice dish served even at Taiwanese celebrations, and Dongfa Hao has kept its taste steady for years. Its squid thick soup, made with fresh cuttlefish, is a mild, starch-thickened broth. Many order the two together. Prices are a rough guide.
