Why you must eat itA big silver-carp head, deboned and stewed in a thick, glossy soup. The cheeks and gelatinous parts are silky, the broth deep and sweet. After a walk through the snacks, sit down and close with this one pot. A river-fish dish only a water village does — and, locals say, a very good one.
Qibao Lao Fandian is an old benbang (Shanghai-cuisine) house on the old street, and the deboned fish-head stew is its signature. In a water village thick with rivers, river-fish cooking developed, and "chaihui" — pulling out the head bones then stewing — is painstaking work. It also serves benbang home dishes like zharou (soy-braised pork). A sit-down place to finish.
