Scallion-pancake stalls, Qibao
×Cong You Bing (scallion pancake)
Why you must eat itWheat dough folded with scallion and lard, pressed on a griddle then fried in oil. Crisp in many layers outside, chewy within. Bite it and the scallion scent and oil arrive together. A Shanghai street staple, but in Qibao some old shops still bake it over charcoal or wood fire. One hot piece.
Cong you bing is a Shanghai-wide staple, and on Qibao Old Street it is baked and sold at the storefront. Folding the dough repeatedly for layers is the key, and each shop differs in thickness and oil. Some draw queues; you wait for a fresh one and take it hot. A piece to eat walking.
