Stinky tofu is an emblematic Jiangnan and Shanghai snack, sold fresh-fried on skewers or paper plates in Qibao. Fermentation and frying vary by shop — the black Changsha style and Shanghai's paler line. On the old street it is usually eaten with sweet bean sauce. A dish always somewhere along the lane.
