Why you must eat itA Jiangnan baked sweet cooked in a crabapple-flower mould. Bean paste in a wheat batter, sugar caramelised crisp on top. Fresh from the mould the sugar base crackles and the inside is soft. Rare now in the city centre, Qibao still bakes it live.
Haitanggao is a traditional sweet across Jiangnan — Wuxi, Shanghai — baked in a dedicated round mould. On Qibao Old Street they bake it at the storefront; you find it by the baking sound and sweet smell. It often sits beside meihuagao (plum-blossom shape) from a similar mould.
