Siam Road Char Koay Teow

×Char Koay Teow

暹羅律炒粿條 × 炒粿條

Why you must eat itOver a hard charcoal flame, thin koay teow is tossed all at once with prawns, cockles, bean sprouts, chives and egg. The scorch of soy and the wok's breath pass straight into the plate. The uncle turns one portion at a time, so the queue is long but the wok moves fast. The plate is small and not heavy with oil, yet the charcoal scent lingers. He lights the coals by late afternoon and closes when they are gone.

A long-running charcoal wok stall on the roadside of Siam Road, counted among the faces of Penang char koay teow; the spot can shift. To keep the flame hard it fries one plate at a time, so the wait is long. Prices and hours are a guide, and on some days weather or charcoal brings an early close.
