Kimberley Street Koay Teow Th'ng

×Koay Teow Th'ng

汕頭街粿條湯 × 粿條湯

Why you must eat itIn a clear broth drawn from chicken and duck bones, flat koay teow is settled with duck meat, meatballs, duck blood and spring onion. The same noodle as char koay teow, eaten now in soup — a quiet bowl. The clear liquid is deeper in savor than it looks, and a shake of pepper tightens its edge. Slipped in at night between richer plates, it settles the mouth.

A koay teow th'ng stall that comes out at night on Kimberley Street. Duck meat is the standard, and it lines the same street as the neighboring chee cheong fun and duck koay chap. Being a soup, most sit to eat. Prices and hours are a guide; it runs late, though some nights the toppings sell out early.
