Why you must eat itSteamed rice sheets are rolled into tubes, snipped apart with scissors, and layered with a sweet prawn-paste (hae ko) sauce, chili paste and sesame. Unlike the Hong Kong kind, Penang chee cheong fun turns on this black, sweet prawn sauce — pungent in the nose, round on the finish. Soft and slippery, a plate goes down standing at the stall. It is chosen as a light opening plate at the night market.

A chee cheong fun stall in a night corner of Lebuh Kimberley. The prawn-paste sauce is a Penang signature, its balance of sweet and heat differing by shop. You can order small, so it shares easily with other plates. Prices and hours are a guide; it usually appears from evening into the night.
