Why you must eat itThe house speciality uses no flour, bound instead with grated mountain yam — light and airy, steaming when the spatula cuts in. The pork okonomiyaki lays belly pork over the batter, griddled slowly and finished with sauce and green nori. The staff cook it, so you wait to have it cut. The queue is long, but this is a plate to sit down and take your time over.

Mizuno, founded 1945, is an old okonomiyaki house in a Dotonbori side lane. Its signature "yamaimo-yaki," griddled with mountain yam and no wheat flour, has earned a Michelin Bib Gourmand. Seats are few and it queues day and night. Besides the pork, beef tendon and the mixed version are standards.
