Why you must eat itStraight from the oven the cheesecake is soft enough to wobble. Raisins line the base, and the Danish cream-cheese batter is airy, melting and vanishing in the mouth. The branded old-man's face is its mark. Even a whole cake is restrained in sweetness, and best while warm. Cut it onto a paper plate, or let it cool and turn dense for a different face. When the baking bell rings, the queue moves.
Rikuro's, founded 1956, is known for the Osaka-born freshly baked cheesecake. At the Namba main shop the storefront oven runs all day, selling 18-centimetre whole cakes one at a time. It is a souffle type made with Danish cream cheese, the raisins at the base tightening the flavour. A standard Osaka souvenir, with a constant queue waiting for the next bake.
