×Bacalhau Fritters (Bolinhos de Bacalhau)

Why you must eat itSalt-dried cod is soaked back to softness, its salt drawn out, flaked, and mixed with steamed potato, onion and egg, shaped into ovals and fried. The outside sets golden and firm; break one open and steam rises with the scent of cod and potato. The soft interior keeps the salt and savour of the dried fish. Served a few to a plate as a starter, taken with a squeeze of lemon. Many pair it with wine or cold beer. Some places make a limited number.

Bacalhau is Portuguese for salt cod, a staple woven into Macau's table — used in fritters as well as baked and stewed dishes. Desalting and the heat change the taste, so each kitchen has its own. Prices and range are a guide, so check on site.
