Why you must eat itChicken is marinated in a paste of chilli, garlic, paprika and coconut, roasted over charcoal or in an oven, then finished with more of the sauce. The skin chars fragrant while the flesh stays moist with sauce. Behind the heat sit coconut sweetness and nutty depth, and the pooled sauce is wiped up with bread. Many places sell it by the half, right for two to share. With rice or potato, it is a dish to take slowly.
