Why you must eat itThin egg noodles struck with duck egg, and wontons wrapped around whole shrimp, sunk in a clear broth drawn from dried flatfish and shrimp shells. The noodles sit under, the wontons over; eat the noodles first so they do not soften. They bite firm and springy, the wontons snapping with shrimp. Yellow chives and pepper lift the scent. A small bowl with one coil is the Cantonese portion — order two things and it is right.

Wonton-noodle shops are scattered around Beijing Road, prizing thin noodles and clear broth. Some make a point of "bamboo-pole" noodles pressed under a pole. Prices and hours are a guide; you can ask for extra noodles or none. Busy at noon and night. Names change, so check on the spot.
