Why you must eat itEgg batter is poured into an iron mould of round hollows and cooked over charcoal or flame on both sides. It comes off as one sheet of joined spheres, crisp outside and soft, almost custardy, within. Fresh it is hot — pull it apart and let the steam go as you eat. Beyond plain there is matcha and chocolate, but for the egg itself take the original. Easy to eat walking, and the stall goes up in the evening crowd.

A baked snack from Hong Kong, but a standard walking bite on Guangzhou's pedestrian streets too. Cooked by flipping the iron mould, so you can watch it made at the stall and choose. Prices and hours are a guide, and the flavours depend on the shop. Most stalls come out from evening into night. Names change — follow the smell of the fresh bake.
