Why you must eat itBatter of rice and starch is poured into small clay bowls, a few red beans sunk in, and steamed. Cooled it sets half-clear, and a bamboo pick run round the rim turns it out. It bounces at the tooth — the brown-sugar ones fragrant, the pale ones lightly sweet. Eaten on a pick in the lane. Choose the flavour by colour — yellow, white, brown — and the rows of bowls on the stall are the landmark.
A steamed sweet common across Guangdong and Hong Kong, named for the bowl it steams in. Sold at stalls and small shops around Beijing Road, in flavours from brown sugar to water chestnut to red bean. Prices and hours are a guide, and when the fresh-steamed run out you wait for the next. Made for eating as you walk. Names change, so go by what you find.
