Why you must eat itA river fish is split and first grilled over charcoal, then moved to a shallow iron pan lined with chili, Sichuan pepper and vegetables, and simmered at the table on a burner as you eat. Grilled then stewed, in two stages: the flesh is fragrant, and in the second half it drinks in the hot broth. When the fish is gone, add tofu, lotus root and tofu skin to the pan. One fish for a table of several — a dish of a riverside city, with the heat adjustable.
Grilled fish is said to come from Wanzhou in eastern Chongqing, and "Wanzhou grilled fish" signs are everywhere in the city. Hongyadong sits near where the Jialing meets the Yangtze, and shops serving river fish line up. Grass carp and catfish are standard; you choose the fish and the flavour (mala, xiangla and so on) when ordering. The grilling takes time, so order as soon as you arrive.
