Why you must eat itBone-in chicken stir-fried and braised in an iron pot with chili, Sichuan pepper and spices. Kept on a table burner, it grows richer as it reduces. Eat the chicken first, then, as it thins out, add vegetables, tofu skin and noodles to cook in the remaining sauce — somewhere between hotpot and a stir-fry. The sauce is scant and thick, and it goes well with rice. The heat is adjustable, and it is a pot for several.

Jigong bao is said to have spread from around Shanghai, but in Chongqing it settled into a form heavier on the local heat, served widely in neighbourhood canteens. The "gong" is said to mean a rooster. Less of a production than full hotpot and easy for two or three, it is popular for the evening meal around Hongyadong. Order it through to the finishing noodles and you leave full.
