Why you must eat itBoiled noodles tossed with oil and fanned cool, then yellow noodles dressed with chili oil, soy, vinegar, garlic water and Sichuan pepper — a dry noodle. Stirred well, the cold strands take on heat, sourness and sweetness at once. Bean sprouts and shredded cucumber are often added. Being cold, it is loved in summer and eats clean after the weight of hotpot. At stalls it comes in a paper bowl you can eat on the move.

Chongqing cold noodles are close to Chengdu's but tend a little heavier on chili oil and Sichuan pepper. Sold from morning at corner stalls and noodle shops, the balance of heat and sweetness varies house to house. Made at home in summer too, it is an everyday bowl — and, among Chongqing's mostly hot dishes, a rare clean one. In a spot like Hongyadong, some shops serve a small portion for eating as you walk.
