Beef, duck intestine, lotus root, tofu skin, mushrooms — a long list, and the bill is counted by the sticks you finish. Easier than full hotpot and fine to do alone, with the same heat and numbness. Dip each skewer in the oil dish. Most stay open late — the star of the night market.

Chuanchuan is "hotpot on sticks," born in Chongqing and Chengdu, and the streets around Hongyadong gather shops open into the small hours. A pot sits at the centre of the table while you carry skewers from a chilled case along the wall. Some shops cook noodles or potato in the leftover broth to finish. The more of you there are, the more kinds of skewer you can try.
