×Ciba (fried sticky-rice cake in brown sugar)
Why you must eat itSteamed and pounded glutinous rice, cut into squares, lightly fried so the outside crisps, then dressed with brown-sugar syrup and toasted soybean flour. Crisp outside, long and soft within. Eaten hot, the sugar pulls into threads and the soy flour adds a roasted note. It makes a good sweet close after a run of chuanchuan and hotpot heat, and is sold in the Hongyadong night market too. A few pieces to a plate, shared.
Ciba is a glutinous-rice cake eaten across the Yangtze valley, and in Chongqing the sweet treatment — brown sugar and soybean flour — is a stall staple. Once pounded at home for New Year and celebrations, it is now sold year-round in the snack streets. Some shops pair the same cake with spicy dishes or grill it on skewers. Sweet but filling, it is a satisfying plate for a food walk.
