Why you must eat itSmall jelly drops of rice batter floated in sweet brown-sugar water — a cold drink. Each drop tapers at one end into a shape like a little shrimp, which is why it is called liangxia ("cool shrimp"), though there is no shrimp in it. It goes down smooth; scoop it with a spoon or drink it straight. A cup after a run of spice pulls the heat out of your mouth. A summer regular.
Liangxia is a cold summer sweet of Chongqing and Sichuan, sold at stalls and dessert shops alongside bingfen (clear jelly) and liangao. In a walking spot like Hongyadong, many pick one up between spicy meals as much for the hydration. Besides brown sugar, there is an ice-heavy summer version and a combination served with bingfen.
