×Spiny Lobster Miso Soup

Why you must eat itThe Sotobo coast is famed for spiny lobster. Crack the head and shell into a miso soup and it yields a stock deeper than the meat, the broth turning sweet. On a stomach full of bowls and sashimi, it lands as the last cup. Hold the bowl with a lobster half in it in both hands and suck even the inside of the shell — the Boso way.

The Sotobo coast (Katsuura–Kamogawa–Wada) has a strong spiny-lobster fishery, in season from autumn into winter. Kamogawa fish shops serve, besides sashimi and whole lobster, a miso soup made from the head. It costs, but the stock the shell gives is unique to spiny lobster. Add it to a bowl or order it alone.
