Why you must eat itEgg and rice-flour batter spread on a hot plate, oysters laid in and fried hard. Two ways to order: the thin, crisp orsuan, or the softer, egg-bound hoi tod. The outside crackles; the oysters stay half-cooked and burst with juice. Eaten with a sweet-hot garlic chilli sauce.

Nai Mong is an oyster-omelette specialist on Phlap Phla Chai Road near Yaowarat, running since the 1960s and a Bib Gourmand regular. A cheaper mussel version exists too. Open evening to late, with tables to sit at.
