Why you must eat itA flatbread crisped on the outside is split along its side and packed with long-braised, finely chopped meat. In the Muslim Quarter it is usually lamb or beef, fat and lean chopped together, sometimes with a little green chili. The crust cracks, the crumb stays moist. As you bite, juice seeps from the edge, and many eat tilted upward to keep it from dripping. It comes fast and makes a good first bite on the walk; the sound of chopping at the counter marks the spot.
Often called a Chinese burger, rou jia mo is complete with just two things: bread and meat. The braising liquid is often replenished for years and becomes each shop's backbone. The price shifts with portion and cut, so treat it as a guide. Lines grow at peak hours; judge and queue once you are there.
