Why you must eat itYou tear the hard-baked flatbread into bean-sized crumbs with your own hands and sink them into the bowl. In the kitchen it is filled with mutton, clear broth, vermicelli, and greens, then carried back to your table. The mutton is quieter than expected; a little sweet-pickled garlic and chili paste tighten its edges. The bread softens with broth yet keeps a core. The finer you tear, the more evenly the flavor spreads. The hall is wide and shared; arrive a little early to beat the noon line.
Paomo is one of Xi'an's defining bowls, kept alive in the Hui community's eateries. Having guests tear their own bread treats the waiting as part of the meal. Prices and hours are only a guide; some houses let you choose how fine the crumbs and how much broth. Crowds vary by day, so check on the ground.
